Ingredients

  • 4 russet potatoes
  • Vegetable oil spray (like PAM)
  • Salt
  • Pepper
  • Aluminum foil
  • ½ cup water
  • Butter (optional)
  • Sour cream (optional)
  • Chives (optional)
  • Shredded cheddar cheese (optional)

With just a few ingredients and plenty of topping options, everyone at the table can make their own potato just the way they like it.

If you add enough toppings, this dish can be eaten as a main. Popular choices for toppings include butter, sour cream, chives, green onions, shredded cheddar cheese, and bacon bits. If you are eating it as a side, it goes great with other baked vegtables or a simple protein.

Instructions

  • Prep the potatoes
    • Spray potatoes with vegetable oil and season with salt and pepper.
    • Individually wrap the seasoned potatoes in aluminum foil.
    • Add water to the bottom of the slow cooker, and place wrapped potatoes in slow cooker.

  • Cook
    • Cover and cook in a slow cooker on low for 6-7 hours or 4-5 hours on high. You’ll know the potatoes are done when a fork can easily piece through the potatoes. 
    • Use tongs or oven mitts to safely remove and unwrap each potato. Watch out for steam! 
    • Slice each potato down the middle to expose the inside, add toppings (optional), and serve
