Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 ½ cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes
  • ½ teaspoon paprika
  • ⅓ cup sun-dried tomatoes, drained and chopped
  • ½ cup parmesan cheese, grated
  • 10 fresh basil leaves, chopped
  • Salt

The creamy sauce and tender chicken are a hit with picky eaters, and it cooks in the slow cooker while you go about your day. It pairs well with pantry staples like pasta and rice, and it makes great leftovers.

Instructions:

  • Make seasoning mix
    • Mix ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon onion powder, and a pinch of pepper in a small bowl.
    • Rub the chicken breasts with the seasoning mix.

  • Sear the chicken
    • Heat olive oil in a large skillet on medium-high. 
    • Sear chicken breast for 2-4 minutes per side. Chicken will not be fully cooked at this point. Set aside on a plate. Keep the oil in the skillet as you will need it later in the recipe.
Searing the chicken
  • Prep the slow cooker
    • In a medium to large bowl, combine chicken broth and cornstarch. Whisk until smooth. Don’t put the whisk in the sink. You will need it again. 
    • Pour mixture into the slow cooker.
    • Add cream, garlic, Italian seasoning, ½ teaspoon salt, ½ teaspoon pepper, red pepper flakes, and paprika to the slow cooker. Whisk until well mixed.
    • Put chicken breast into the slow cooker.
    • Add oil from the skillet to the slow cooker. 
    • Top the chicken with sundried tomatoes

  • Cook
    • Set the slow cooker to low for 6 hours.

  • Finishing touches
    • Remove chicken from the slow cooker and set aside on a plate.
    • Add parmesan cheese to the slow cooker. Mix well.
    • Return chicken and any accumulated juices to the slow cooker. Spoon sauce over the chicken. 
    • Transfer chicken to serving plates. 
    • Spoon sauce (including sun-dried tomatoes) over chicken and top with basil. 
    • Serve.
