Instructions:
- Pre-heat oven
- Place the cast iron skillet into the oven and preheat to 475 degrees.
- Make the batter
- In a medium bowl, whisk the eggs. Gradually whisk in the milk, followed by the flour, a pinch of nutmeg, and a pinch of salt.
- Prep the skillet for cooking
- Once the oven is pre-heated, drop the oven temperature to 425 degrees.
- Remove the skillet from the oven and place butter in it.
- Swirl the skillet to coat the bottom and sides with the melted butter.
- Pour batter into the skillet. Return to the oven.
- Bake baby bake
- Bake for 10-12 minutes, until puffy and lightly browned.
- Remove from the oven.

- While still in the skillet, add powdered sugar.
