Ingredients

  • 2 pounds boneless skinless chicken breast
  • 1 cup or frozen or canned corn (drained)
  • 1 bell pepper, sliced into thin strips
  • 1 small yellow onion, diced
  • 4 tablespoons taco seasoning (2 packets)
  • 1 cup red salsa, mild
  • 1 cup cream cheese or sour cream (8 ounces)
  • 1 can black beans or pinto beans, drained and rinsed
  • 4-5 servings Instant Rice cups
  • 4-6 large flour tortillas (burrito size)
  • Shredded cheese (optional)
  • Avocado slices (optional)

This recipe works well for families with young kids because it’s mild, creamy, and easy to customize. Busy parents will love that the slow cooker handles most of the cooking, plus it makes cleanup easy. Chopping and cutting is limited to a bell pepper and onion. Each family member can build their own plate with the toppings they like most, such as avocado, shredded cheese, or hot peppers. The tender shredded chicken and soft textures make it easy for younger kids to enjoy.

Instructions:

  • Prep the slow cooker
    • Add the chicken, corn, bell pepper, onion, taco seasoning, salsa, and cream cheese to the slow cooker.

  • Cook low and slow
    • Set the slow cooker to low and cook for about 5 hours. Cooking time will vary depending on the size of your slow cooker. The chicken is done when it’s falling apart and can easily be shredded. 

  • Shred the chicken
    • When the chicken is falling apart, shred it with a fork in the slow cooker. 

  • Finishing touches
    • Add the beans, mix well, and cook for another 5-10 minutes.
    • While the beans warm, microwave your Instant Rice cups and warm the tortillas on a large skillet
    • Add one rice cup to each tortilla, and then top the tortillas with the finished chicken mixture.
    • If you want to add any other toppings (i.e. avocado, cheese), now’s the time.
    • Wrap the tortillas and enjoy
