Ingredients

  • 2 tablespoons olive oil
  • Kosher salt
  • Pepper
  • 8 bone-in, skin on chicken thighs (about 3-4 pounds)
  • 8 green onions, white and green parts separated and thinly sliced
  • 1.5 cups chicken stock
  • 1 tablespoon Grey Poupon country dijon mustard or similar grainy dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons crème fraîche
  • 3.5 ounces frozen peas (roughly ⅔ of a cup)

Instructions:

  • Prepare the slow cooker
    • Set the slow cooker to low.
    • To the slow cooker, add the mustard, chicken stock, and honey.
    • Mix well. We’ll come back to the slow cooker after we brown the chicken.

  • Brown the green onions
    • Add 1 tablespoon of olive oil to the skillet and heat on medium high heat.
    • Add the white parts of the green onions and cook for 3 minutes or until browned.
    • Add the browned green onions to the slow cooker. 

  • Brown the chicken
    • Clean the skillet with a paper towel if needed.
    • Add 1 tablespoon of olive oil to the skillet and heat on medium high heat.
    • Season the chicken thighs with salt and pepper.
    • Add the chicken thighs to the skillet, skin side down. Cook for 4 minutes (untouched) until the skin has browned. Depending on the size of your skillet, you might need to do this in 2 batches. 
    • Once the chicken skin has browned, transfer it to the slow cooker.

  • Let it cook low and slow
    • Set a timer for 4 hours, and cover it with the slow cooker top. 

  • Finishing touches
    • Mix in the crème fraîche and peas, and continue cooking for another 15 minutes but with the lid removed.
    • Remove the chicken and add to rimmed plate or pasta bowl
    • Use a soup ladle to spoon out the sauce and veggies, topping the chicken.
