Ingredients
- 2 tablespoons olive oil
- Kosher salt
- Pepper
- 8 bone-in, skin on chicken thighs (about 3-4 pounds)
- 8 green onions, white and green parts separated and thinly sliced
- 1.5 cups chicken stock
- 1 tablespoon Grey Poupon country dijon mustard or similar grainy dijon mustard
- 1 tablespoon honey
- 2 tablespoons crème fraîche
- 3.5 ounces frozen peas (roughly ⅔ of a cup)

Instructions:
- Prepare the slow cooker
- Set the slow cooker to low.
- To the slow cooker, add the mustard, chicken stock, and honey.
- Mix well. We’ll come back to the slow cooker after we brown the chicken.
- Brown the green onions
- Add 1 tablespoon of olive oil to the skillet and heat on medium high heat.
- Add the white parts of the green onions and cook for 3 minutes or until browned.
- Add the browned green onions to the slow cooker.
- Brown the chicken
- Clean the skillet with a paper towel if needed.
- Add 1 tablespoon of olive oil to the skillet and heat on medium high heat.
- Season the chicken thighs with salt and pepper.
- Add the chicken thighs to the skillet, skin side down. Cook for 4 minutes (untouched) until the skin has browned. Depending on the size of your skillet, you might need to do this in 2 batches.
- Once the chicken skin has browned, transfer it to the slow cooker.
- Let it cook low and slow
- Set a timer for 4 hours, and cover it with the slow cooker top.
- Finishing touches
- Mix in the crème fraîche and peas, and continue cooking for another 15 minutes but with the lid removed.
- Remove the chicken and add to rimmed plate or pasta bowl
- Use a soup ladle to spoon out the sauce and veggies, topping the chicken.
