Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausages, casings removed
- 4 garlic cloves, peeled and finely chopped
- 1 red onion, peeled and finely chopped
- 1 red bell pepper, deseeded and cut into 1 inch pieces
- 1 can diced tomatoes
- 2 tablespoons tomato purée (tomato sauce)
- 2 teaspoons dried oregano
- 2.5 cups vegetable stock
- 9 ounce dried orzo
- 3 ounces cream cheese
- 2 ounces parmesan cheese, shredded
- Fresh basil leaves, thinly sliced
- Kosher salt
- Pepper
Why this recipe is great for families
Our sausage orzo comes together in about 30 minutes and uses only one pan, making it convenient for busy weeknights. The dish features mild sausage, orzo pasta, and a creamy tomato-based sauce, offering flavors that are generally appealing to children. Additionally, it includes vegetables like bell peppers and onions, providing a balanced meal in a single dish.
Instructions:
- Cook the sausage
- Add olive oil to a large saute pan and heat on high heat.
- Break up the sausage into small pieces. Add to the saute pan and cook for 5 minutes. Mash and break up the sausage pieces into smaller chunks as it cooks.
- Keep the ingredients coming
- Add the garlic, onion and peppers and cook for 5 minutes.
- Add the diced tomatoes, tomato puree, oregano, vegetable stock and orzo.
- Cover and cook for 10-15 minutes. Stir occasionally until the orzo is cooked.
- Mix in the cream cheese and stir until evenly distributed.
- Add the toppings
- Top with parmesan cheese basil.
- Let cook a few minutes before serving.
