Ingredients

  • 1 cup of mild green or tomatillo salsa, jarred
  • 2 Anaheim or poblano chiles, diced
  • ½ teaspoon dried oregano
  • 2-3 pounds boneless, skinless chicken thighs
  • 1 lime
  • 10-15 Flour tortillas, 6-8 inch size
  • 1/4 cup cilantro, chopped fine (optional)
  • Shredded cheddar cheese (optional)
  • Avocado, sliced (optional)

Why this recipe is great for families

There’s nothing wrong with making tacos from a seasoning packet, but this recipe will take your tacos to the next level without too much complexity. The ingredient list is short, prep before cooking is simple, and the recipe gives your family flexibility on dinner time. The salsa choice and selection of toppings also give this recipe longevity as it can reinvent itself over and over again.

The dish can be eaten on its own, but it also pairs well with simple canned sides like refried beans, black beans, corn, or a mixed vegetable medley. 

Instructions:

  • Prep the slow cooker
    • Remove the stems and seeds from the poblanos. Chop into short thin strips.
    • Add salsa, poblanos, and oregano into the slow cooker
    • Season chicken thighs with salt and pepper, and put in the slow cooker.

  • Cook low and slow
    • Cover and cook on low for 4-5 hours. Chicken is done when it can easily be pulled apart.
    • While still in the slow cooker, use tongs or a fork to break the chicken into bite-sized pieces. Shredding the chicken with the fork also works.
    • Squeeze the juice of one lime into the slow cooker.
    • If using cilantro, add to the slow cooker too.
    • Switch the slow cooker to warm until ready to eat.

  • Heat and stuff the tortillas
    • Once ready to eat, warm tortillas in a hot skillet
    • Using a slotted spoon or tongs, fill the tacos with chicken mixture
    • Add toppings (optional)
