Ingredients

  • 7 tablespoons mayonnaise, divided (3 tablespoons in the small bowl and 4 tablespoons in the large bowl) 
  • 1 tablespoon of lemon juice (equal to the juice of half a lemon)
  • 1 cup bread crumbs, ideally thicker cut or panko bread crumbs
  • 1 lb ground turkey
  • 1/2 cup of feta cheese, crumbled
  • 2 tablespoons of olive oil
  • 4 hamburger buns
  • Salt
  • Pepper

This easy weeknight dinner swaps ground beef for lean ground turkey, making it perfect for a lighter, tasty twist on cheeseburgers. No grill or oven needed, and you can prep the patties the night before to make dinner time even smoother. Low mess, quick to make, and a hit with the whole family.

Instructions:

  • Make the lemon mayo
    • In a small bowl, mix 3 tablespoons of mayo with lemon juice and a pinch of pepper. This will be your zesty burger sauce. Set it aside in the fridge while you cook.

  • Shape the burger patties
    • In the large bowl, combine the remaining mayo (4 tablespoons), ground turkey, breadcrumbs, feta , ½ teaspoon of salt, and 1/2 teaspoon pepper. Form the mix into 4 burger patties. Flatten the patties so each is about ½ inch thick.

  • Cook the burgers
    • Heat olive oil in the skillet over medium heat.
    • Once hot and shimmering, add the 4 patties to the skillet.
    • Cook for 10-14 minutes, flipping at the half way point. The burgers are done when the meat registers 160 degrees.  Cook time may vary depending on the thickness of the burger.
    • While the burgers are cooking, toast the hamburger buns (optional).

  • Build the burgers 
    • Put the cooked burgers on buns, add a spoonful of that lemon mayo, and serve.
