Ingredients

  • 2 boneless skinless chicken breasts, diced into bite-sized pieces
  • 2 zucchini, diced
  • 1 small red onion, diced
  • 4 cloves garlic, peeled and smashed
  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ⅔ cup feta cheese, crumbled (about 3.5 ounces)

This recipe is great for families with kids because it’s quick and easy, and the ingredient list is short. Mess is low with only a single baking sheet, and the dish works great as a simple weeknight dinner. 

The dish pairs great with Instant Rice cups, Greek yogurt (topping), or a Greek salad. 

Instructions:

  • Pre-heat oven
    • Set your oven to 400 degrees.

  • Prep the baking sheet
    • While the oven pre-heats, prepare all ingredients. 
    • On a rimmed baking sheet, add the chicken, zucchini, red onion, garlic, oregano, olive oil, salt and pepper (everything except the feta). Toss to coat.

  • Bake
    • Bake for 20 minutes, mixing at the halfway point.
    • After 20 minutes, remove the baking sheet from the oven and sprinkle the feta on top. Cook for another 5 minutes.  
    • Remove from the oven and serve.
