Ingredients
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 3 garlic cloves, minced
- 1 pound Italian sausages (mild), casings removed
- 4 cups chicken stock or broth
- 2, 15 ounce cans of diced tomatoes
- 6 ounces tomato paste
- 1 ½ teaspoons Italian seasoning
- 8 uncooked lasagna noodles, broken into bite-sized pieces
- ½ cup Parmesan cheese, grated
- Salt
- Pepper
- 1 cup shredded mozzarella cheese (optional)
- Fresh basil (optional)

The ingredients are kid-friendly, and it’s easy to customize based on your family’s preferences. Feel free to swap the Italian sausages for ground beef or use a combination of the two meats.

Instructions:
- Sauté aromatics
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and cook for 2-3 minutes until softened.
- Stir in minced garlic and cook for an additional minute.

- Cook sausage
- Add Italian sausage to the pot, breaking it up with a wooden spoon.
- Cook until browned. Drain any excess grease.
- Add liquids and seasonings
- Pour in chicken stock, diced tomatoes, and tomato paste. Stir to combine.
- Add Italian seasoning, and bring the mixture to a light boil.

- Cook noodles
- Add broken lasagna noodles to the pot. Cook for 8-10 minutes, or until noodles are tender.
- Stir in grated Parmesan
- Season with salt and pepper to taste

- Serve
- Add to bowls and serve.
