Ingredients
- 1 lb ground chicken
- ½ cup bread crumbs
- ¼ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 egg
- Kosher salt
- Pepper
- 3 tablespoons olive oil
- 1 can crushed tomatoes (28 ounces)
- ¼ teaspoon red pepper flakes
- 1.5 cups shredded mozzarella
- Basil (optional)

Instructions:
- Preheat the oven
- Preheat to 400 degrees.
- Make the meatballs
- In a large bowl, add the ground chicken, breadcrumbs, Parmesan cheese, half the garlic, egg, 1 teaspoon salt, and ½ teaspoon pepper. Combine and form into meatballs about the size of golf balls.
- Brown the meatballs
- In the large skillet, heat 1 tablespoon of olive oil on medium heat.
- Brown the meatballs for 2 minutes per side.
- Transfer browned meatballs to a plate.
- Prep the skillet for the oven
- Add 2 tablespoons of olive oil to the skillet.
- Add the remaining garlic and red pepper flakes, and cook for 1 minute.
- Mix in the crushed tomatoes, and turn up the heat to high.
- Bring to a simmer.
- Return the browned meatballs to the skillet.
- Top the meatballs with the mozzarella cheese.
- Bake in the oven
- Move the cheese topped meatballs to the oven and bake for about 10 minutes.
- Do a quick temperature check on the meatballs to ensure they are cooked through.
- Serve
- Remove from the oven and let rest for a few minutes before serving.
