Ingredients
- 1 can of condensed French onion soup (10.5 ounce)
- 2 tablespoons tomato paste
- ½ ounce dried porcini mushrooms, rinsed
- 1 boneless beef chuck-eye roast (2-3 lbs)
- 1 lb small, gold or yellow potatoes
- 1 lb baby carrots

Instructions:
- Prep the slow cooker
- Add French onion soup, tomato paste, and mushrooms to the slow cooker
- Generously season the beef with salt and pepper. Add to the slow cooker.
- Top the beef with carrots and potatoes.
- Cover and cook on high for 6-7 hours or low for 9-10 hours.

- Remove roast and veggies
- Move the roast to a cutting board. Cover with aluminum foil and let rest for at least 15 minutes.
- Remove veggies and sauce, and place in a large bowl. Spoon sauce over veggies. Cover with aluminum foil.
- Slice and eat
- Slice against the grain or pull apart into bite-sized chunks.
- Serve with veggies. Spoon sauce over veggies and pot roast.
- Add salt and pepper as needed.
