Ingredients

  • 6 slices bacon, chopped into 1-inch pieces 
  • 2 heads of cauliflower, cored and cut into bite-sized florets 
  • 1 teaspoon garlic powder
  • Black pepper
  • Salt
  • 1/3 cup shredded sharp cheddar cheese
  • 4 green onions, green parts removed and white parts sliced thinly
  • 1/3 cup ranch dressing

Instructions:

  • Get the oven ready
    • Preheat your oven to 425°F. Line the baking sheet with parchment paper for easy cleanup.

  • Cook the bacon
    • Grab a large skillet and cook the bacon over medium-high heat until it’s cooked and crispy. Let it cool on a paper towel.
    • Save about 1/4 cup of the bacon grease

  • Toss the cauliflower
    • In a large bowl, toss the cauliflower with the bacon grease, garlic powder, and a little black pepper. Stir it until the cauliflower is well coated.

  • Bake
    • Spread the cauliflower out on your baking sheet and pop it in the oven.
    • Bake for about 20 minutes, flipping it halfway through, until the cauliflower is golden and tender.

  • Add the cheese
    • Sprinkle shredded cheddar over the cauliflower and bake for another 3 minutes, until the cheese melts and gets gooey.

  • Finish it off
    • Take it out of the oven.
    • Top with bacon and green onions, then drizzle with ranch dressing.
    • Serve it warm and watch the smiles appear
