Ingredients
- 1 ½ cups shredded rotisserie chicken (usually about half a chicken)
- 1 ½ cups shredded cheese blend
- ⅓ cup mild salsa
- 1 cup refried beans
- 12-16 flour tortillas, 5-6 inch street taco size
- 3 tablespoons oil
- Sour cream (optional)
- Cilantro (optional)
- Avocado slices (optional)

Instructions:
- Warm the oven
- Pre-heat the oven to 200°F. We’ll use the oven to keep the quesadillas hot while you cook in batches.
- Mix the filling
- In a medium bowl, combine the chicken, cheese, and salsa.
- Assemble quesadillas
- Spread refried beans on half of a tortilla, then spoon some of the chicken mixture on top. Fold it over like a taco.
- Repeat with all the tortillas.
- Cook
- Heat 1 tablespoon of oil in a skillet over medium heat.
- Add a few quesadillas at a time to the skillet, and cook for 1–2 minutes per side until golden and crispy.
- Move quesadillas to the baking sheet and then the oven to stay warm while you finish the rest.
- Repeat until all the quesadillas are cooked.
- Serve
- Let everyone top their quesadillas however they like.
